Class descriptions are listed in alphabetical order.  Please note, some classes require mastery of some skills prior to enrollment.  In these cases, prerequisites are listed.

Advanced Cake Decorating Be your own cake BOSS.  Learn about cake structure, support and building multi-tier  wedding cakes.  Learn to work with rolled fondant,  pastillage and advanced hand piping techniques.

Advanced Pastry We’ll make strudel,  traditional pies, and chocolate pastry. Prerequisite:  Beginning Pastry

Basic Cake Decorating Learn how to shape and fill layered cakes.  Practice icing and decorating the exterior of your filled cakes, and learn some basic hand piping techniques.  Discover and refine your artistic cake decorating skills.

Beginning Pastry We’ll teach you pastry essentials and golden rules to enable you to create wonderful, delicious pastry.  Learn to make Pâte Brisée, Pâte à foncer, Pâte sucrée, and Pâte Choux

Chocolate Learn about tempering, dipping, modeling and other techniques used to decorate with chocolate.  Recipes included.

Contemporary Sauces “Saucing” is a culinary technique and you will learn how to create fresh and fast sauces to top your pasta, meats, salads and desserts.  You may never again purchase a sauce mix or a canned sauce because you lack the skill to create them.  Prerequisite:  Fresh Soups

Fancy Pastry Want to make some eye-catching delectables?  This is the class for you.  We will learn to make Fruit & Cheese Tarts, Puff Pastry Tarts, Apple Dumplings and Chocolate Éclairs.  Prerequisites:  Beginning Pastry, Advanced Pastry.

Fresh Pasta 101 Learning a basic recipe and some easy techniques will enable you to create masterful pasta dishes.  Saving money and time on top of serving a wonderfully delicious finish product is all the motivation you will need for taking this fun class.   Recipes included.  Take homemade ravioli home to your friends or family to show off what you learned.

Fresh Pasta 201 In this class we will take what we learned in FP 101 to the next level.  Make delicious stuffed pasta such as cappalletti, tortellini and a very impressive “pasta roll”.  You will learn to make formed pasta, like cavatelli, and take home the recipes.  Prerequisite FP 101

Fresh Pasta 301 The journey of pasta love goes on.  We’ll make Potato Gnocchi, Manicotti & Mezzaluna.  You will take home pasta for 3 separate meals, with a total of 12 servings.  Prerequisite FP 101

Fresh Soups Once you learn the secret to successful soup making you will enjoy many nutritional meals.  Accompany this class with our Bread Making class, and you will have add a great new repertoire to your kitchen skills and menus.  We will make vegetable and chicken stocks, staples in successful cooks’ kitchens.  Additionally, you will learn to make soups from legumes.

Pies Learn the tricks and techniques of making perfect pastry crust for traditional pies.  We will make a pie from scratch, from start to finish.  You will take your pie home to share with your family.

Savory Pastry Expand on your pastry skills and learn how to make savory classics like quiche, tarts, packages and purses filled with meat, cheese and vegetable fillings.  Prerequisites:  Beginning Pastry, Advanced Pastry.

Stuffed Meats and Roulades Here is a way to bring the WOW-factor into your kitchen.  Learn some easy recipes that will illustrate the techniques used to create signature dishes like Chicken Cordon Bleu.  The next time you throw a dinner party, you’ll love showing off this skill.

Sugar Cookies Learn the secrets and recipes to making sugar cookie cutouts.  Each student will make and decorate 1 dozen cookies to take home, along with the exceptional recipes to recreate them in their own home.

Yeast Breads Fresh homemade bread is one of the most memorable and favorite smells people have.  Learn a few simple techniques to make wonderful yeast breads and rolls in your own home.
